Ev’s Challah (from Gertie and Max Brodsky)

 

½ c.oil                          2 c. warm water

1/3 c. sugar                   1 T. salt (I use less)

4 pkg. yeast (3 T.)*       3 eggs

1 c. + 8 c. flour

 

* I use a little less yeast - maybe 2 T,

 

Oven 350. Mix all ingredients except the bulk of the flour with a dough hook.  Let sit a few minutes.  Mix in the rest of the flour.  Knead.  Let rise until doubled in a oiled bowl. Punch down and let rise again. Shape into 9 balls, and roll them in logs.  Braid them into 3 loaves and put into greased cookie sheet.  Let rise again.  Bake for about 30 – 40  minutes.
