Banana Spice Cake

2/3 c. shortening (or ½ c. oil)

2 ½ c. cake flour (or 2 ¼ c. flour)

1 2/3 c. sugar

1 ¼ t. baking powder ½ t. cinnamon

1 t. soda ¼ t. cloves

1 t. salt ¼ t. allspice

1 ¼ c. mashed bananas

2/3 c. buttermilk (1/3 c. at a time.)

2 eggs (or 3 egg whites)

Oven 350. Mix together all ingredients except eggs and 1/3 c. of buttermilk until moistened. Mix in remaining ingredients and beat 2 minutes. Pour into greased 13”x9” pan. Bake about 35 min.
