Hummingbird Cake

 

3 c. flour                        2 c. sugar

1 t. salt                         1 t. soda

1 t. cinnamon                3 eggs, beaten

1 ½ c. salad oil              1 ½ t. vanilla

8 oz. can crushed pineapple (undrained)

1 c. chopped pecans      2 c. chopped bananas

 

Oven 350.  Combine dry ingredients in a large bowl.  Mix in eggs and oil.  Do not beat.  Stir in remaining ingredients and pour into greased pan.  (Either 3 round pans or a sheet pan.)  Bake 25-30 min. for round pans, or 40-45 min for sheet pan.  Let cool. Frost with Cream Cheese Icing.
