Prune-nut Spice Cake

(Marty Habich, with my own directions))

1 c. prunes (chopped and plumped and let cool.)

2 c. sugar                      1 c. oil                         

3 eggs                          1 t. vanilla

2 c. flour                        1 t. soda

1 t. cloves                     1 t. nutmeg

1 t. allspice                   1 t. cinnamon

1/2 t. salt                      1 c. buttermilk

1 c. chopped pecans

 

Mix the sugar, oil and eggs well.  Add the dry ingredients, all at once and half the buttermilk.  Mix until smooth.  Mix in remaining buttermilk.  Add the prunes and pecans.  Spray two loaf pans with Pam.  Divide the batter between two loaf pans.  Bake at 350 degrees for about 40-45 minutes. 

 

Frost with caramel icing.
