Amoretto Cheesecake (Mother Wonderful’s)

 

Crust

 

2 c. crumbs from graham crackers

¼ c. sugar

¼ c. melted butter

 

Process crackers into crumbs.  Process with sugar.  Add melted butter and process.  Press into 10 “ spring form pan.  Place in freezer while preparing the filling.

 

Filling

 

2 lb. (4 8 oz pkgs) cream cheese

1 ½ c. sugar                  1 T. Amoretto liqueur

1 t. vanilla                      1 t. almond extract

4 eggs                          pinch of salt

 

Oven 350.  Combine on low speed cheese and sugar, then extracts, then eggs.  Pour into crust.

Bake 40 min.  (+5 min if ingredients are cold.)

Let sit 10 minutes while preparing the topping.

 

Topping:  2 c. sour cream,  ¼ c. sugar and

               1 t. vanilla

Spread topping over cheesecake.  Return to oven for 10 minutes.  Let cool immediately in refrigerator.

 

Goes well alone or with cherry or blueberry toppings.
