Cherry Pecan Biscotti

2 ¼ c. flour

1 c. sugar

1 tsp baking powder

½ tsp baking soda

1 tsp cinnamon

½ tsp ground nutmeg

2 eggs

2 egg whites

1 T. vanilla extract

¾ c. chopped pecans

¾ c. chopped dried cherries

Combine first six ingredients (up to the eggs.) In another container whisk together eggs, egg whites and vanilla. Add to dry ingredients mixing until just moistened. Add cherries and pecans and mix thoroughly.

On a floured surface, divide the dough in half and pat each half into a log about 14” long and 1 ½ “ wide. Place on cookie sheet and bake for 30 minutes at 321ºF. Remove from the cookies sheet and allow to cool on wire racks.

Cut biscotti into ½ inch slices and stand upright on cookie sheet. Bake at 300ºF for 20 minutes. Store in a loosely covered container.
