Hammentaschen (Bertha Bailen) (Hammen's Hats, from the Biblical book of Esther)

 

½ c. butter                    1 c. sugar

1 egg                            2 T. milk

1 t. vanilla                      ¼ t. salt

2 c. flour                        2 t. baking power

 

Oven 375.  Mix dough. Chill. Roll out ¼” thick.  Cut into circles.  Put filling in center.  Pinch together two sides then fold up the 3rd side to make a 3 cornered hat.  Bake 10 – 12 minutes.  (Can use extra flour when rolling the dough.)  Don't be too particular about the shapes.

 

 

Filling:

 

Grind together in food processor:

1/3 box raisins

1/3 box pitted prunes

peel of 1 lemon (yellow part only)

1/3 c. strawberry preserves

 

Heat in microwave until it changes color, stirring several times.  Let cool before using.  Makes a good kolache or coffee cake filling too.
