Raisin Spice Squares

 

1 c. raisins                    water as needed    

(plump in  microwave and cool)

2 c. flour                        1/2 t. salt

1 t. soda                       1 c. brown sugar

1/4 t. cloves                   1/4 t. allspice (opt.)

t. cinnamon                   1/2 c. oil (slightly less)

2 egg whites (or 1 egg)  

1/2 c. chopped walnuts (optional)

 

Mix dry ingredients. Stir in remaining wet  ingredients, then add flour mixture.  Pour into greased 9x13"pan. Oven  350  25 min. 

 

When cool, frost if desired. Can use lemon icing or caramel icing.

 

Lemon Icing

 

2 c. confectioner's sugar

2 T. melted or very soft butter

fresh grated rind of one lemon

Juice of 1 lemon, add a little bit at a time.

May add a little more sure and hot water if needed to make enough.

 

Caramel Icing

 

1/4 c. butter

1/2 c. brown sugar

2 T. milk or cream

1 t. vanilla

1 c. powdered sugar

 

Melt butter.  Stir in brown sugar and heat to boiling and stir for 2 minutes. (microwave is fine)  Stir in milk and reheat to boiling.  Remove from heat.  Add powdered sugar and vanilla and mix until smooth.  (If mixture becomes too stiff add additional milk, 1 t. at a time.)
