Scandinavian Almond Bars

½ c. butter

1 c. sugar

1 egg

½ t. almond extract

1 ¾ c. flour

2 t. baking powder

¼ t. salt

½ c. sliced almonds

milk for brushing

Mix together butter and sugar. Then mix in egg and extract. Add flour, baking powder and salt all at once. Stir the dry ingredients on top together before mixing into the butter mixture. Divide dough into fourths. Form each into a 12 inch long roll. Place 4-5 inches apart on an un-greased cookie sheet. Flatten rolls until about 3 inches wide. Brush with milk and sprinkle with almonds. Bake at 325º for 12 – 14 minutes, or until edges are lightly browned. While they are warm, cut crosswise, in 1 inch strips (so you get a 1” x 3” rectangular cookie.) and remove from pan. When cool drizzle with icing.

Almond Icing

1 c. confectioners sugar

2 – 4 T. milk

¼ t. almond extract
