Cream Puffs

 

1 c. water                      1 c. flour

½ c. butter                    4 eggs

 

Oven 400 deg.  In a saucepan, heat water and butter to rolling boil.  Vigorously stir in flour on low heat (about 1 min.) until mixture forms a ball.  Beat in eggs one at a time, beating until they are all smooth.  Drop by ¼ c. fuls (full size) or spoonfuls (mini) on a ungreased baking sheet.  Bake 35-40 min, until golden.  Let cool.  Cut off tops and pull out any filaments. Fill with chocolate mousse or vanilla cream. Refrigerate until serving.
