Fish Almondine
inspired by Luby’s
¾ – 1 pound cod or other thick whitefish
~ ½ T. mayonaise
1 T. butter melted
3 T. bread fine crumbs (whole wheat if possible)
2 t. Mural of Flavor (Penzeys) or appropriate mild seasonings for fish.
2 T. Sliced almonds

Oven 350°
Rinse the fish and place it in a glass pan. Spread a very thin layer of mayonnaise over the fish. Melt butter in a glass dish. Stir in bread crumbs and seasoning. Spread topping over fish, covering it completely and press it down a little if needed. Sprinkle sliced almonds over the top. Pour water in the pan until it comes halfway up the side of the fish. Bake for 30 minutes.
