ALWAYS READY BRAN MUFFINS

 

3 c. bran                       1 c. boiling water

- Combine above and let steep.

2 1/2 c. flour                  1 c. brown sugar

2 1/2 t. soda                  1 t. salt

- Combine above 4 ingredients in bowl.

- Add the following and the bran/water.

1/2 c. oil                        2 c. buttermilk

2 eggs

 

Stir well. Optional:  Add raisins or nuts or chopped dates or other dried fruit Let stand for at least 12 hours before baking.  May be kept in refrigerator up to 6 weeks.

 

Bake at 400 deg. for about 25 min.

Makes about 33 muffins and 115 calories per muffin.
