Apple Pie

Sue Cardinal

1 unbaked pie shell

1 unbaked top crust or 1 recipe of crumb topping

Filling

6 cups peeled and cut up apples (Sue likes cut them pretty thick so they still have texture after baking. She normally uses Empire apples but for the Texas pies she used ½ Granny Smith and ½ Fuji)

½ - ¾ cup sugar

2 Tbsp. flour

1 Tbsp lemon juice

1 tsp cinnamon

½ tsp ginger

¼ tsp. nutmeg

Mix together all filling ingredients. Put in unbaked pie shell.

If using a top crust dot with butter and put crust on top. Cut slits in crust. Bake 425° for about 45 minutes.

If using crumb topping, spread topping evenly over pie, trying not to leave gaps. Bake according to crumb topping recipe.
