Cranberry Ginger Relish

 

12 oz. cranberries, washed and drained

3/4 c. + 2 T. sugar

1 c. water

1/2 c. crystallized ginger, chopped.

 

Combine water, sugar and cranberries in sauce pan. Bring to boil.  Turn down heat and let simmer/boil for 10-15 minutes (until most cranberries are popped and it cooks down a little.)  Remove from heat and stir in crystallized ginger.
