Baked Butternut Squash

 

Cut squash in half lengthwise and remove seeds.

Place face down on a baking sheet smeared with olive oil. Bake at 350 degrees for about 45 minutes (or until soft)

 

Can serve hot

or let cool.  Use a spoon to remove it from its skin.  Mash it and add a little butter or heart healthy margarine, cinnamon and optionally a little maple syrup.
