Baked Garlic Eggplant
eggplant olive oil
minced garlic (in a jar) salt
Peel eggplant(s) and slice 1/2 inch thick.. Heavily salt one side, place in pan & wait at least 1/2 hour. Turn over, salt, and wait another 1/2 hour. Rinse well and pat dry. This will take the bitterness out.
Put some olive oil in a jelly roll pan (large flat pan with lip.) Take each slice and smear olive oil on it and flip it over on oil, leaving them in pan. Liberally sprinkle with garlic. Bake at 350 for 20-30 minutes. Should be tender with garlic roasted.
