Mashed Cauliflower

1 medium head of cauliflower, chopped
¼ c. chicken or vegetable stock
2 T. grated Parmesan or Romano cheese
1 T. extra virgin olive oil
1 T. nonfat PLAIN greek yogurt
1 clove garlic, smashed
salt & pepper
Rosemary, chopped for garnish
Steam cauliflower until well cooked and tender (10 minutes or so.) Remove from heat and steam. Add hot cauliflower to a food processor with the remaining ingredients except salt, pepper & garnish. Process until smooth. Add salt and pepper to tasted. Garnish and serve.
