Bagette Bread

Ben's variations from Bread by Ingram & Shapter

1 pkg or 1 T. yeast 1 t. salt

2 ¼ c. warm water 2 T. sugar

1 c. flour

~ 5 c. bread flour

Mix all ingredients except the bread flour and let rest 5 to 10 minutes. Mix in enough of the rest of the flour to make a slightly moist dough. Let rest 15-30 minutes. Knead for a minute or two to ensure well mixed. Let rise in oiled bowl until doubled (1 to 2 hours). Shape and let rise again.

Bake at 425 º for 20 minutes.
