Holiday Stollen (Yulekage)

 

1 c. white raisins            1 c. chopped dried apricots

- soak above in apricot brandy overnight & drain

                                                (drink brandy)

1/2 c. melted butter        2 c. milk

1/4 c. sugar                   2 eggs

1 t. salt                         5 t. dry yeast (2 pkgs.)

~6 c. flour                      1 t. cardamom

zest of one lemon and one orange

 

1/2 c. chopped red and green candies cherries

Optional: 1 cup chopped nuts

Optional:  Filling & extra butter.

 

Mix all ingredients except fruit, filling and total flour, with 1 c. flour.  Let sit a couple of minutes.  Add fruit and remaining flour to make a slightly sticky dough.

Knead on floured surface.  Put in oiled bowl to rise.

 

When doubled shape as desired, either a 2 standard loaves, or 2 loaves rolled up jellyroll like with cinnamon filling or into a coffee ring.

 

Filling: 

1/2 c. brown sugar

1/4 c. white sugar

1 t. cinnamon

Mix together. 

 

To use, roll out dough in rectangle.  Spread with butter or margarine.  Sprinkle on filling.  Roll up.

 

Bake  350, for 25 - 30 minutes.  Can ice when cool.
