Carrot Cake (Non-Fat)   Oven 350


1 c. applesauce             3 egg whites

1 c. brown sugar

grated rind and juice of one orange

-Mix above together, then add all at once:

3 c. cake flour                1 t. cinnamon

2 t. baking powder          1/2 t. salt

1 t. baking soda

-Blend until smooth, then mix in:

 3 c. shredded carrots    1 c. raisins


Grease (or Pam) bundt style or spring form pan with center hole.  Pour in batter and bake 50 to 60 min. or until a knife inserted near center comes out clean. After cool, spoon over  orange glaze.





             Orange Glaze (for carrot cake)


2 c. powdered sugar       4 T. orange juice

1 T. lemon juice             1 t. grated orange rind


Stir all ingredients thoroughly.
