Poppy Seed Chicken  (Aunt Geneva)

 

1 cooked, boned, shredded chicken

             (reserve broth)

1 c. chopped onion

1 c. chopped bell pepper

1 c. celery

--- Slightly cook above vegetables in small

amount of the broth. Use rest of broth for something else.    Mix above with:

1 can Cream of Chicken (or Mushroom) soup

8 oz. Sour Cream

½ c. mayonnaise

 

Grease a  9x13 casserole. Layer ½ of above mixture. Sprinkle with poppy seeds and top with a layer of Ritz crackers.  Repeat. Pour melted butter over the top (~ 1/4 –1/2 stick) .  Bake at  350 for 35-40 minutes or until bubbly.
