Accidental Peppermint Balls

(Based on Christmas stockings, I accidentally used peppermint flavoring instead of almond.)

 

1 c. butter         ½ c. powdered sugar (sifted)

1 t. vanilla          ½ t. peppermint extract

¼ t. food coloring (optional)

2 ¼ c. flour        ½ t. salt

Chocolate Chips (Ghirardelli, 60% cocoa)

Crushed peppermint pieces (Bob's sweet stripes)

 

The chocolate chips will be used for the filling.  Mix dough. If too soft to handle, chill.  (I usually don't.)  Take a small lump of dough and put three chocolate chips in the center. Roll into a ball.  Flatten very slightly with hand on cookie sheet.  Bake at 400 for 10-12 min.  When cool, ice tops with peppermint cookie glaze. May sprinkle with crushed peppermint pieces if desired.

 

 

Peppermint Cookie Glaze

(Variation of Aus Am.States – Penny’s cookies)

 

1½ c sifted confectioner’s sugar

2 T. warm water

½ T. white corn syrup

½ t.  peppermint extract

 

Add syrup to warm water.  Mix with remaining ingredients.  If it starts to dry out/harden, add a few drops of hot water.
