Dark Chocolate Cherry Oatmeal Cookies

½ c. oil ½ c. cocoa

1 c. sugar 1 c. flour

1 t. vanilla 1 t. soda

2 eggs ½ t. salt

¾ c. mini chocolate chips

2 c 1 minute oats

1 c. dried cherries

Oven 350º. With a whip, mix together oil, sugar, vanilla and eggs until well combined. Add the cocoa, flour, soda and salt, all at once, on top of the wet ingredients. Stir the dry ingredients together on top; then mix into the wet ones. Mix in the chocolate chips and cherries. Now mix in the oats. Let rest 10-15 minutes. Drop by scoops (mounded teaspoons) or roll into balls onto greased baking sheets. Cookies will not spread very much so you can place closer together than usual. Bake 9 -12 minutes or until just set. Makes about 3 dozen. Freeze any you don’t plan to use within a day or so, so they stay fresh.
