Forgotten Meringue Cookies

2 egg whites

2/3 c. sugar

pinch of salt

1 t. vanilla

1 c. pecans (chopped)

1 c. chocolate chips or chopped dried fruit

Oven 350º Beat egg whites until stiff; add sugar and continue beating. (Eggs will be grainy.) Mix in remaining ingredients. Line two cookie sheets with parchment paper (shiny side up.) Drop cookies by teaspoonfuls. Put in oven. Turn oven off. Do not open door. Leave in oven overnight or until oven is completely cool.
