Crepes or Blintzes

 

1 ½ c. flour                    1 T. sugar

½ t. baking powder         ½ t. salt

2 c. milk                        2 eggs

½ t. vanilla                     2 T. melted butter

 

Beat ingredients together until smooth.  Lightly butter non-stick pan. Fry ¼ c. batter over medium heat.  Put in oven on low until ready to serve.  Fill or top as desired.

 

 

Blueberry Topping

 

1 16 oz. pkg. frozen blueberries (rinsed and drained)

½ c. sugar

2 T. water

½ t. cinnamon (if desired)

 

Cook over medium heat about 30 minutes, until fruit is cooked.  Dissolve 1-2 t. cornstarch in about the same amount of water.  Stir into fruit mixture and keep stirring and heating until thick (about 1 minute.) Remove from heat and serve.
