Sticky Toffee Pudding

Adapted from a recipe from epicurian.com (I modified the directions for simplicity and microwave use.)

 

6 oz. pitted dates, chopped

2 c. hot water

1/4 c. butter                   3/4 c. sugar
1 egg                            1 t. vanilla extract

2 c. flour                        1/2 t. baking soda
1/2 t. baking powder       2-4 T. water (if needed)

Chop dates & soak in hot water until water is tepid (at least 1/2 hour.) Cream butter and sugar, add egg & vanilla and mix well. Add flour, baking soda, and baking powder and mix. Add date mixture. The mixture should be like muffin batter.  If it is too stiff, add additional water.  Turn into greased 8x8 or 9x9 pan and bake approximately 30-45 min. in moderately hot oven.(325-350). Check with knife or toothpick to make sure it is done (it should come out clean.)

 

Toffee Sauce

6 T. butter                     3/4 c. dark brown sugar

1/2 c. whipping cream

 

Using the microwave, melt the butter in a glass bowl.  Stir in the brown sugar and cream.  Use microwave to boil mixture for 1-2 more minutes (watch so it doesn't boil over.)

 

To serve: Cut warm pudding (date cake) into squares and pour hot sauce over it. Serves 6-9.
