Tapioca Pudding (Vanilla)

 

In a saucepan combine:

 

2 3/4 c. milk

1 beaten egg

1/3 c. sugar

4 T. minute tapioca (or 3T for a less thick pudding)

 

Wait 5 minutes.  Heat (stirring frequently  when it gets hot) until it comes to a full boil.  Remove from heat. Stir in:

 

2 t. real vanilla

 

Let cool. Will thicken as it cools. Stir. Serve warm or chilled.

 

 

Variation: Chocolate

 

Same as basic recipe except:

 

Increase sugar to 1/2 c.

Add:  2 oz semi sweet chocolate

Reduce vanilla to 1 t.

Increase sugar to 2/3 c.

Add 1/4 c. cocoa

Reduce vanilla to 1 t.
