Falafels
1 can (15 oz.) garbanzo beans, rinse & drained
¼ c. shredded carrots
2 T. - 4 T. flour
2 T. fresh parsley or 2 t. dried
1 T. extra virgin olive oil
3 cloves garlic
½ t. salt
1 t. coriander (ground)
½ t. cumin
black pepper
Optional – 1 egg, this helps it stay together better when frying but is not traditional.
Grape-seed or peanut oil for frying
Process all ingredients, except flour and egg in food processor until smooth. Add enough flour so it is dry enough to shape. Optionally, mix in one egg.
Shape into small patties and fry about 2-3 minutes per side, until brown.
Serve with chopped tomatoes, cucumber yogurt salad and pita bread (or flour tortillas).
