Baked Fish - Plain

 

Good fish (orange roughy, salmon, halibut, etc.)

Pam

Olive Oil or Liquid Margarine or Butter

Lemon juice

Optional herbs

 

Oven 375 - 400

 

Rinse fish.  Pam a glass baking dish. Put fish in dish.   Spread a little lemon juice over it. Spread a thin coat of oil or liquid margarine/butter.  Optionally sprinkle spices or herbs.  (I like the Spice Islands blends, like Orange/Ginger, Lemon Pepper or Key Lime.) Bake until flaky and opaque.  (10 –25 minutes depending on thickness and frozen state of fish.)

 

 

Baked Fish with Tomato & Cheese

 

Use orange roughy or other mild fish.  Prepare as for plain baked fish through adding the oil.  Put one layer of very thin slices of tomato over fish.  Sprinkle with Parmesan cheese.  Bake as with plain fish. (Probably about 15-20 minutes.)
