Mincemeat (Fruit Only) Pie

Adapted from Joy of Cooking


4 -6 medium apples, peeled, cored and diced

1 ½ c. raisins

grated rind of one orange

juice of one orange – about ¼ c.

½ c. apple juice


Cook above mixture in a large saucepan until apples are very soft. Then mix in:


¾ c. sugar

½ t. (teaspoon) cinnamon

½ t. (teaspoon) cloves


After mincemeat is cooled may stir in 2 T. (tablespoons) bourbon or rum. (optional)


Place cooled mincemeat in a bottom pie shell.

Dot with 2 T. (tablespoons) butter.

Cover with top crust and cut slits.


Bake at 425° for 30 minutes. Serve with whipped cream.
