Hot (German) Potato Salad

12 potatoes

½ medium onion, chopped

1 bell pepper, chopped (optional)

6 slices bacon

1 c. vinegar

½ c. sugar

½ c. water

2 T. flour

1 hard cooked egg, chopped

parsley, chopped

salt & pepper

Cooked the peeled potatoes but don't allow to get mushy. Slice while warm and set in warm place. Cut up bacon into small squares. Fry the bacon, and add chopped onions to cook for a bit. Take off heat and add a mixture of vinegar, water, sugar and flour. Return to heat and cook until it thickens. Add this mixture to the warm potatoes. Sprinkle top with chopped egg and parsley. Serve warm.
