Red Potato Salad


2 lb. Small red potatoes

2 stalks celery, thinly sliced

1 T. onion, finely chopped (or sliced green onions)

Mayonnaise (enough to lightly coat the potatoes)

Mustard to taste

Horseradish to taste

Optional: 1 hard cooked egg, chopped


Wash potatoes, cutting off bad spots and put them in a saucepan with water. Cook until tender. Drain potatoes and let them cool a bit. Cut potatoes into bit size chunks. Add other ingredients. Chill.
