Basil's Avocado & Crabmeat Soup
(Basil's was a great restaurant that has closed)
2 lg. avocados (peeled &
pitted)
4 c. chicken stock
1 clove garlic
1/2 t. oregano
1/4 t. pepper
pinch cayenne
juice of 1 lime
1/2 c. dry white wine
1/2 c. half & half or cream
1/2 lb. cooked crabmeat
Use a blender to puree the
avocados & chicken stock & spices in two batches (you can add all spice
to the first batch.) Add remaining
ingredients one at a time, stirring after each addition. Serve, garnished with sour cream and a
little paprika.
