Tzimmes  (Irene’s combination from several

   Recipes in the Art of Jewish Cooking.)

 

Brisket or pot roast, optional.

1 lb. Dried fruit (prunes, apricots, etc.)

1 t. salt

pepper

3 carrots (in large chunks)

2 –3 yams, peeled and sliced

6 thin slices lemon or lime.

2 c. orange juice

Water or additional orange juice to cover.

 

If using meat, cut in chunks and brown it.  Combine all ingredients, except lemon slices, in a large casserole or crockpot.  Make sure there is enough liquid to nearly cover.  Place lemon slices on top.  Cover and bake at 325 to 350 for a long time (at least 3 hours.) or if using a crockpot cook for 6 hours or until yams are cooked.
