Baked Squash with Tomatoes
Casserole
->In a small pan bring about:
3 T. Chopped garlic & 4
T. Olive Oil to boiling, then remove from heat.
->In a 13x9 glass or
ceramic pan layer:
2 each small sliced zucchini
& yellow squash
Thinly slice two tomatoes and
layer on top.
Sprinkle with Fines Herbs
& ~2 T. fresh grated Parmesan
cheese and about half the garlic/oil mixture.
->Repeat above with 1 each
zucchini & yellow squash and 3 tomatoes. Sprinkle with herbs, cheese &
garlic/oil mixture.
Bake at 350 for 45 - 60
minutes. Serve hot.
